Tomato Basil Soup


Tomato Basil Soup

(adapted from Taste of Home website)

Makes: 6 servings

Time: 15-20 minutes

2 Tbs. chopped green onion

2 garlic cloves (minced)

1 ½ tsp. olive oil

1 can crushed tomatoes

1 can condensed chicken broth (undiluted)

1 1/3 cup water

¼ tsp. pepper

¾ c. heavy whipping cream

2 Tbs. chicken broth

2 Tbs. minced fresh basil

2 tsp. sugar

  1. Sauté onion and garlic in oil until tender.
  2. Add tomatoes, broth, water, and pepper
  3. Stir in cream, additional broth, basil and sugar
  4. Cook for 1 minute or until heated through.
